You just buy them through the V-Bucks tab in Fortnite and finish the transaction in the Nintendo eShop!

Open Fortnite on your Switch, go to the V-Bucks tab, and choose the amount you want. Complete the purchase through the Nintendo eShop. Boom, V-Bucks added!
