Just play around with the inventory menus. You'll find the assign button. It's not rocket science, even if it feels like it sometimes!
From my experience, it's pretty straightforward. Access your inventory, highlight the weapon, and look for an 'Assign' or 'Quick Slot' option.
Hit the pause button, go to your weapons tab, choose your weapon, and there's an option to assign it to a quick slot. Simple as that!
Why not just experiment a bit? The game has a pretty intuitive UI, you'll figure it out in no time.
