To appear offline in Apex Legends on Steam, you actually need to change your Steam settings. Launch Steam, click on 'Friends' at the top, then select 'Offline' or 'Invisible'. This makes you appear offline on Steam, so your friends can't see you're playing Apex Legends or any game.
