Easy peasy! Just launch your Steam client, click on 'Friends & Chat' at the bottom right, then click on your username at the top of the Friends list, and select 'Offline.' Voila, you're a ghost!

Actually, appearing offline won't stop Steam from showing the last game you played. So, if you're trying to hide your gaming habits, this method has its limits.
