I've done this myself: pick a STEM major in college, score high grades, and stay disciplined. Then apply for a Chemical Engineer role directly when available.

You don't need to overthink it. Just go to college, pick a science-related major, and apply for science jobs until 'Chemical Engineer' pops up.
