From my experience, fighters with good mobility and ranged attacks work best. Every time Bowser misses a powerful attack, it's your chance to punish him. Stay patient and don't let him corner you.
The trick is to stay agile and keep your distance. Bowser's a beast up close, so hit him with ranged attacks and avoid his powerful smashes. Use quick characters like Pikachu or Sheik to dart in, land hits, and get out before he can counter!
Just spam projectiles. Seriously, Bowser can't handle constant long-range attacks. Characters like Samus or Link work wonders here.
