Arborick isn't all that tough once you learn his patterns! Dizzy him by hitting the legs and dodge when he tries to slam you.
What worked for me was using Spyro's Earth Flail and timing my attacks right when Arborick lifted his arms for a huge smash. When you see him about to slam, dodge roll to the side and then whack his legs!
Dude, just keep hitting his legs until he goes down. Simple as that!
