The trick to beating the infamous train mission, where you have to follow the train with Big Smoke on the back of your bike, is all about keeping the right distance. Stay parallel to the train, but not too close. This way, Big Smoke has a clear shot at the Vagos on top of the train. Also, try to anticipate the turns and slow down just enough so you don't overshoot them but still keep up with the train. Practice makes perfect with this one!
Honestly, just skip it. If it's driving you nuts, take a break and explore the rest of the game. GTA San Andreas is massive, with plenty to do besides chasing trains.
