It's actually pretty straightforward! Just be a girl character, stay on the good path, and apply for the nun job in the occupations tab when you're old enough.

Once my character turned 18, I went to the Job section and found the Nun position under 'Religious Vacancies.' I applied and got it right away! Just make sure you've been good so far.
