Another way is using the Privacy shortcuts. Go to the top right corner, click on the question mark, select 'Privacy Shortcuts,' then 'Who can see my stuff?' and customize your settings.

You can also change your post settings. Before posting, click on the audience selector (usually says 'Friends') and choose 'Friends except...' Then, type the name of the person you want to block from seeing that specific post.
