Just die or blow things up! Seriously, fail the mission in any way (dying usually works fast), and you'll get the option to skip or quit after a few tries. GTA isn't exactly forgiving, but it does let you bail if you're really not feeling a mission.

Canceling a mission in GTA 5 isn't as straightforward as pressing a button, but you've got options. One way is to simply fail the mission a few times; the game will give you an option to skip it. Another method is to open your phone in-game, head to the 'Job List', and then quit the mission from there. Just be ready to deal with the in-game consequences of bailing!

IMO just stick with it. Part of the fun of GTA 5 is the challenge. Quitting missions? That's not the GTA way!
