To cancel moves in Street Fighter 5, you need to use what's called a 'special cancel' or a 'V-Trigger cancel.' For special cancels, input a special move immediately after a normal attack connects to cancel the animation. V-Trigger cancels require activating your V-Trigger mid-combo to reset your move list and extend your combo.

Just hit your V-Trigger during a combo. It'll cancel your move and let you keep attacking. Easy peasy!

As a long-time player, the best way is to practice special cancels in training mode. It's all about muscle memory!
