Just head over to your Account settings on Pinterest, scroll down and hit 'Deactivate Account'. Easy peasy lemon squeezy.
If you need to cancel your Pinterest account, just go to your settings and find 'Account Settings'. From there, click 'Deactivate Account' and follow the prompts. I did it last month, and it was smooth sailing!
