Just open the Microsoft Edge browser on your phone, head to account.microsoft.com, log in, find Services & Subscriptions, and click Cancel under Xbox Live.

You can't cancel Xbox Live directly from the Xbox app as of my knowledge, so use a mobile browser to access account.microsoft.com and manage your subscription there.
