It's a bit tricky because of HDCP protection on the PS3. But a good HDMI splitter and capture card combo will do the trick.

To capture PS3 gameplay, you need an HDMI splitter that bypasses HDCP protection, an HDMI capture card, and software like OBS. Connect the PS3 HDMI output to the splitter, then connect one HDMI output to your TV and the other to the capture card. Finally, connect the capture card to your PC and fire up your capture software!
