I find it easiest to use the Game DVR. Just double-tap the Xbox button and then hit 'X' for a video or 'Y' for a screenshot.

For longer recordings, go to the 'Capture & share' tab in the guide and select 'Start recording.' You can then stop the recording by pressing the Xbox button again and selecting 'Stop recording.'
