Honestly, just sneak up behind them and ZR. If you've got the spell, it's a one-button wonder.
Casting spells in video games always confuses me, but with Hogwarts Legacy, it was surprisingly simple. Once I learned Petrificus Totalus in-game, executing it was just a matter of targeting and holding down the right button. Took down my first unaware dark wizard in the Forbidden Forest, and it felt EPIC.
