From my experience, you just need to tap the Poké Ball, head to Settings, and scroll down to sign out. Then, simply log in with your new account. Works like a charm!

Open Pokémon GO, tap the Poké Ball at the bottom center, go to Settings, scroll down and select 'Sign Out.' Then you can log in with a different account!

To change your account in Pokémon GO, just log out and log back in with the new account's credentials. Easy peasy!
