Once you're on the race selection screen, tap on the 'Race Settings' icon (looks like a wrench). Choose your preferred CC (50cc, 100cc, 150cc, or 200cc). Hit “Confirm” and you're good to go!

From personal experience, just hit the wrench on the bottom left of the course screen, select your CC, and confirm. Zoom zoom!
