How to change character in Plants vs Zombies
In Plants vs Zombies, you can't exactly 'change characters' like you would in a game where you pick a character to play as. What you do is choose different plants to use against the zombies for each level. Before each level starts, you'll be shown the types of zombies you'll be facing, and then you get to pick which plants you want to bring into battle. So, in a way, your 'character' changes based on the plant lineup you choose!

Short answer: You can't switch characters because you're always the homeowner defending against zombies. The 'characters' you get to play around with are the plants you select before each level starts. Each plant has its own unique abilities, so choose wisely based on the zombies you're up against!
Nope, character changing isn't a thing in PvZ. You play as the plants, but hey, with all the different plants available, it's like having a whole roster of characters at your fingertips.
