Just go to the main menu, select 'Party,' and swap characters. It's that simple!
In DBZ Kakarot, you can't change the main character Goku during story mode, but you can swap support characters through the Party menu.
I was stuck on this too! Press Options, navigate to Party, and then choose who you want in your team. Pretty straightforward once you get the hang of it.
