To change a class, use the Advanced Warfare Center. Retrain your soldiers there and pick the new class you desire.

You can change a soldier's class in XCOM 2 by retraining them at the Advanced Warfare Center! It takes about 5 days, but it's worth it.

Honestly, you can't just change class like that unless you use mods. Try “Retrain Rookie” mod on Steam Workshop for more flexibility.
