Just go to Settings, then System, and hit Time. Toggle off auto settings and manually enter the date you want!

Go to Settings > System > Time. Turn off 'Set time automatically' and then manually set your preferred date.

I had to change the date on my Xbox One for a game event. Just went to Settings, System, and then Time to enter the date manually after turning off automatic time.
