Head to Settings, then Accessories, and finally Controllers. You'll find the deadzone settings there. Just tweak them to your preference!

You can't change the deadzone settings for the PS5 controller directly on the console.

Go to Settings > Accessories > Controllers. From there, you can adjust the deadzone settings to your liking. Easy peasy!
