In Franchise mode, you can adjust your depth chart by navigating to the roster section and selecting the depth chart tab. Just drag and drop your players as needed.

Been playing for years, just head over to the roster screen in Franchise mode, then select depth chart and move your players around however you want. It’s pretty straightforward!
