You can change the difficulty by going to the settings menu in the game. Just hit the cogwheel icon on the main screen!

The difficulty can only be changed before you start a new game or match. Once you're in, you're locked in!

From my experience, changing the difficulty can be done in the settings! Look for the cogwheel, it's your gateway to tougher opponents!
