If you want to evolve Eevee into one of its evolutions, you can rename it before evolving. For example, name your Eevee 'Sparky' for Jolteon, 'Rainer' for Vaporeon, and 'Pyro' for Flareon! Just remember this trick only works once per evolution type.

Walk with your Eevee as your buddy and then evolve it! If you want Espeon or Umbreon, make sure to walk 10km and evolve during the day for Espeon or at night for Umbreon, respectively. It's all about timing!
