To evolve Eevee, you can use 25 Eevee candy and rename it to specific names before evolution: 'Sparky' for Jolteon, 'Rainer' for Vaporeon, 'Pyro' for Flareon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon. Remember, this trick works only once per evolution type!

Use the 'name trick' if you haven't yet: name your Eevee 'Sparky' for Jolteon, 'Rainer' for Vaporeon, 'Pyro' for Flareon... you get the idea. Just be aware it's a one-time deal per evolution.
Place Eevee as your buddy and walk 10km to evolve it into Espeon (daytime) or Umbreon (nighttime) by evolving it while it's still your buddy. For Leafeon and Glaceon, use a Mossy Lure or Glacial Lure.
Just rename it depending on desired evolution. Broke? Do some in-game tasks to get candies faster!
Honestly, just stick with Jolteon. It's a shockingly good choice.
