You can't change the email directly in the app, but you can link a different email through a connected login method like Facebook or Google.

To change the email linked to your Pokémon GO account, simply log out and log back in with the new email through either Google, Facebook, or Niantic Kids. Make sure this email is also verified!

As someone who swapped emails, I just logged out and signed back in using a different method (Google/Facebook). Worked like a charm!
