To change the emoji on Facebook, open the Messenger app, go to the chat you want, click on the info button (the 'i' in a circle), and then tap Emoji. Choose your new one from there!
My friend taught me this trick: In a Messenger chat, tap on the name at the top, then 'Emoji,' and switch it up!
Changing emojis isn't possible on the main Facebook app, only on Messenger.
