To switch Fortnite accounts on your PS4, go to the settings, select 'Account Management,' and log out of the current account. Then log in with the new Epic Games account you want to use. Make sure you unlinked your previous account if necessary!

From personal experience, unlinking your current Epic Games account from PSN in your Epic Games account settings, and then linking the new one works flawlessly.

Disconnect your current account in the Fortnite settings, then log in with the new one. Easy peasy!
