Been there, done that! Had to start from scratch with a new character 'cause I wanted a change. Transferred my cash, but yeah, lost all my progress. Kinda like moving to a new city IRL, but with more car chases.
So, you wanna mix it up in Los Santos? Here's the scoop: officially, GTA 5 Online doesn't let you change your character's gender once you've made your choice during the initial creation. BUT, there's a kinda workaround. You can create a new character and transfer your money to them. You'll lose your progress, though, so it's a hefty price for a makeover!
