In Splatoon's campaign, you have to visit the ammo knights shop in the game to change your weapons! Just complete levels to unlock more options.
You can't change weapons between missions in the campaign.
I found that you swap weapons during campaign stages by locating Sheldon and upgrading your loadout there!
