You can't directly change the Instagram notification sound through the app settings, but you can customize it in your iPhone's notification settings. Go to Settings > Notifications > Instagram > Sounds and pick a different tone from there!
Just head to Settings > Notifications > Instagram > Sounds, and pick a new notification tone from the list!
Tried it myself: Go to your iPhone settings, find Instagram under Notifications, and then change the sound there. Easy-peasy!
