I found it in the settings under 'Controls' when I needed an inverted camera in Spyro Reignited Trilogy. Worked like magic!

To change invert controls in Spyro Reignited Trilogy, navigate to the pause menu while playing, select 'Options', and toggle the invert controls to your preference. Easy peasy!
