Go to Settings > General > Network Settings > Advanced Settings. Select IP settings and switch from Automatic to Manual, then enter the new IP address you want.

Easiest way is to restart your router! Most of the time, you'll get a new IP address automatically after the reboot.

Hot take: You rarely need to change the IP address on an Xbox Series X. Most issues can be solved without it!

From personal experience, I just went into Network Settings, chose Advanced Settings, then typed in my own IP address manually. Works every time.
