I changed my Sim's job by selecting their career info and then clicking 'Quit Job.' After that, I just sent them to a new job location!

To change jobs in The Sims FreePlay, tap on the Sim you want to change, then select their career information. From there, select the 'Quit Job' option. Once the Sim has quit their job, you can then choose a new one by sending them to a different workplace!
