To change the language on GTA 5 for PS5, you gotta head into the game's main menu. Once you're there, navigate to Settings, and then you should see an option for Language. I tried everything but ended up having to reinstall the game for the language change to actually work. Seems like a bug to me.

Just change your PS5 system language. GTA 5 should automatically match the language your system is set to. Simple as that.
