Changing the version of Lethal Company isn't directly possible since it's an Early Access game on Steam. Your game automatically updates to the latest version through Steam. But, if you're looking to play an older version, sometimes developers allow access to previous versions via 'Betas' tab in the game's properties on Steam. Right-click on Lethal Company in your library > Properties > Betas and check if there's a dropdown menu with older versions. If not, you're outta luck, and gotta stick with the current version.
