Honestly, the whole mount-changing thing is a bit overhyped IMO. Once you get the broom, why would you use anything else? Speed is king!
As someone who's spent WAY too many hours in the game, let me tell you, unlocking mounts and switching between them is one of the coolest features. After you get the spell to summon mounts, just check your inventory for beasts you've unlocked. Pick your fave and off you go. Makes exploring way more fun.
