You gotta head over to the Epic Games website, sign in, click on your account name, go to General Settings, and you'll see a 'Display Name' field where you can change it. Make sure to hit 'Save Changes'!

Just log into your Epic Games account on their website, go to Account Settings, and change your display name. Easy peasy!
