You can't change the payment method within the Spotify mobile app. Use a web browser to do it. Head to spotify.com/account/payment.
I had to change mine last month and found out you can only change the payment information from a browser on your computer or phone. Go to spotify.com, log in, and head to your account settings. Easy peasy!
