Actually, it's not always just 'get in a car and that's it.' In GTA Online, your current personal vehicle is whatever car you last drove out of your garage. If you want a different one, call your mechanic and have him deliver it, or visit your garage and drive it out. That's how you make it official.

Changing your personal vehicle in GTA 5 is all about the garage life. First, make sure you own more than one vehicle. Then, head to your garage, walk up to the car you want as your new personal vehicle and get in. Boom, it's now set as your personal ride. Remember, you can only switch personal vehicles in single-player mode. Online, it's a bit different; you'll need to use the Interaction Menu, select 'Vehicles', and then 'Request Personal Vehicle' after selecting the one you want from your garage.
