From personal experience, you just need to open Roblox Studio, go to the game you want to change, click 'Game Settings' then 'Basic Info' and upload your new image under 'Icon'. Simple as that!

You can also update your thumbnail in Roblox Studio by going to 'Game Settings' and click 'Thumbnails'. Just upload the image you want.

Not to be a contrarian, but just make sure your image is 512x512 and less than 500KB, or Roblox will throw a fit.
