You can change your PSN email by logging into your account on the PlayStation website, navigating to Account Settings, and updating your Sign-In ID. I did this just last week, and it was a breeze!

Log into your PSN account, head to Account Management, then go to Account Information and select Sign-In ID. Follow the prompts to update your email. Easy peasy!
