To change the power meter in Temple Run, go to the main menu, select Options, and then you can switch the power meter mode!

You can't actually 'change' the power meter itself. You can only switch between the different power-up modes that fill it.

Open the game, hit the gear icon for settings, and you'll see an option to toggle the power meter. Simple as that!
