I did this last month. Just cancel your current monthly subscription first. Then, head to the PlayStation Store, find PS Plus, and choose the yearly option. Easy peasy!

On your PS5, head to Settings -> Account Management -> Account Information -> PlayStation Subscriptions. Cancel the monthly plan and then subscribe to the yearly plan through the PlayStation Store.
