Just go to the Avatar Editor, unequip your current shirt, and change the torso color in the 'Skin Tone' settings. Done!

From personal experience, I found that changing your default shirt color means unequipping any shirt you're wearing and then going to the 'Body' tab in the Avatar Editor. There you can select 'Torso' and pick whatever color you fancy!
