For changing screen mode in Fortnite, go to Settings > Video, then you can adjust the Window Mode to Fullscreen, Windowed, or Windowed Fullscreen.

Just press ALT + Enter to quickly switch between fullscreen and windowed modes while in-game. Works like a charm!
