Subnautica doesn't actually have traditional servers, but you can switch to Hardcore mode from the main menu! Just start a new game and select 'Hardcore' from the difficulty options. Beware: there's no second chance if you die!

In Subnautica, you can't change an existing save to Hardcore mode. You'll have to start a new game and select Hardcore at the start. Enjoy the added challenge!

To switch to Hardcore, you have to start fresh. Just go to the main menu, start a new game, and select Hardcore!
